Winemaker Notes
The grapes carefully hand-picked harvested during the month of August. At the arrival to the winery the grapes were separated from the spines and the must let soaked with the skins. The soaking took place in the crusher, the period been changed from between varieties. For example the Shiraz didn’t soak at all, while the Grenache soaked for four hours. The winemaker decides the diversity of the color, by deciding when to start the smooth crushing – until the must getting light pink.
Every plot fermented separately in a low temperature for preserving the freshness and aromas of every variety.
