The winery was founded in 2,000 as Assence Winery, by three members of the community settlement Ma'ale Zvia: Yaniv Kimchi a high tech company CEO, Eithan Rosenberg – Agronom and landscape designer, and lawyer Itzhak Abramov. The winery relocated to Qibbutz Lotem and changed its name accordingly. Grapes are grown by organic methods on the slopes of Meron Mountain.
