Established in 2001 by Tal and Nir Pelter, the Kibbutz Ein Zivan winery of the northern Golan produces wines from vineyards 1,000 meters above sea level, which allow the fruit a long, slow ripening process. The winery also uses grapes from the Upper Galilee and Jerusalem hills. As well as still red and white wines, Pelter produces Méthode Traditional sparkling wines.
